Afternoon tea that’s gluten free!

cakesWhen you think of an afternoon tea – plates of delicate sandwiches filled with egg, coronation chicken and salmon; scones with lashings of clotted cream and jam; and cakes and gateaux which are beautiful enough to count as works of art – you don’t automatically assume that this treat of all treats might be gluten free. However, if you are lucky enough to be visiting Jersey any time soon then think again: The Club Hotel & Spa in Jersey’s Bohemia restaurant has just introduced a brand new dedicated Gluten Free Afternoon Tea menu.

On offer at Bohemia will be a delicious array of fresh sandwiches and cakes including an absolutely divine gluten free vanilla sponge and finger sandwiches made with gluten free flour. All food will be made on-site using Bohemia’s special gluten free flour blend.

And if you are not lucky enough to be visiting the Bohemia restaurant any time soon, then don’t be disappointed, as they have kindly shared some of their gluten free recipes with Erisea Magazine. Ellen de Jager, Head Pastry Chef at the Bohemia, has given us their exclusive flour blend recipe which you can use to make your own gluten free treats at home. The flour blend recipe is shown below, and for this week’s weekend recipe we’ll be sharing their deliciously simple vanilla sponge recipe.

Bohemia’s Gluten free Flour Blend

330g rice flour, 70g potato flour, 100g tapioca flour, 20g corn flour, 10g soy flour, 5g xanthan gum powder

The eggs hold a lot of protein, while the Xanthan gum adds elasticity. This combination will be the main binding factor and it will help the texture of the final product immensely.

Increase the moisture by adding oil, yoghurt, evaporated milk or brown sugar instead of white sugar.

Beat your batter well to incorporate as much air in as possible.

Add a little bit of baking soda or gluten free baking powder to lift the mix a bit as gluten free flours are heavier in density.

The gluten free Afternoon Tea is priced at £19.95 per person and will be served in Bohemia, on the Roof Terrace, and even on the beautiful poolside ivy clad Terrace. It will be served daily from 2.15pm until 5.30pm.
