Gluten Free Eggs Benedicts with Smoked Salmon
Here’s a very tasty way to start the Day. A mouth watering combination of soft, runny poached eggs, succulent smoked salmon and our gluten free Udilicious bagels. This Gluten Free Eggs Benedict recipe serves four, so all the family can tuck in around the breakfast table. This dish looks even better if you gently pop the yolks on the eggs just before serving so they dribble and run irresistibly over the salmon and bagels. Mmmm….tuck in!

Ingredients
  1. 4 eggs
  2. 2 tbsp white wine vinegar
  3. 2 Udi’s Gluten Free Plain Bagels (or Savoury Bagels)
  4. A little butter
  5. 8 slices smoked salmon
  6. Chopped chives for garnish
  7. For the Hollandaise sauce
  8. 2 tsp lemon juice
  9. 2 tsp white wine vinegar
  10. 3 egg yolks
  11. 125g unsalted butter, diced
Instructions
  1. Start by making the Hollandaise sauce. Pour the lemon juice and vinegar into a small bowl, add the egg yolks and whisk with a traditional balloon whisk until the mixture is nicely light and frothy. Place the bowl over a pan of simmering water and whisk again until the mixture begins to thicken. Gradually add the butter, whisking constantly until thicker still. If it looks like it might be splitting, then take off the heat and whisk for a few minutes. Add seasoning to taste and keep warm.
  2. To poach the eggs, bring a large pan of water to the boil and add the vinegar. Reduce the heat so that the water is simmering gently. Stir the water so you have a slight whirlpool, then slide in the eggs one by one. Cook each for about 4 minutes, and then remove with a slotted spoon.
  3. Lightly toast and butter the bagels, then put two slices of salmon on each half. Top each with an egg, then spoon over some Hollandaise and garnish with a sprinkling of chopped chives. Udi’s plain bagels are ideal for this dish, but if you want to up the taste factor even more you could go for our sensational Savoury Bagels, which have a hint of toasted onion.
