Granola Cups


As part of Coeliac Awareness Week we have a number of recipes this week, courtesy of UDI’s to share with you, so get your aprons on and your taste-buds ready for a flavour extravaganza! 

Granola Cups
These delightful granola, berry cups are perfect as an all day treat! Plus the simple yet delicious combination means the kids can get stuck in making them. No excuses!

  1. 3 tablespoons light brown sugar
  2. 3 tablespoons coconut oil or butter, melted
  3. Cooking oil spray
  4. 1 egg
  5. 1 bag Udi’s Gluten Free Au Naturel Granola
  6. 1 cup plain yogurt
  7. Fresh berries
  1. irstly, preheat the oven to 180 °C, then grease a muffin tin with cooking oil spray.
  2. In a large bowl, combine sugar, coconut oil, and egg; stir and add the granola mixing it all together.
  3. Spoon your granola mix into 10 cups of the muffin tin filling each about ¾ full. Using your fingers, press each of the granola nests in the middle to create a small indentation.
  4. Then place in the oven and cook for 15 minutes until slightly golden. Remove the tray and leave to rest in the tin before removing.
  5. Once cooled, fill the nests with yoghurt and top with berries.
  6. That’s it, they’re done!
