Louisianna Cajun Chicken Wings

Louisianna Cajun Chicken Wings
Serves 4
These delicious wings are marinated in white wine and Tabasco® Red Pepper Sauce, then slow roasted with dark brown sugar, chilli, paprika, tomato puree, onions and garlic and extra Tabasco® Red Pepper Sauce to give a wonderful rich and vibrant sticky coating. The ultimate finger food.

  1. 450g/1lb chicken wings
  2. 200ml/7floz dry white wine
  3. 1 tbsp Tabasco® Red Pepper Sauce
  4. 1 onion, peeled and finely chopped
  5. 1 clove garlic, peeled and crushed
  6. 75g/3oz dark brown sugar
  7. 1 red chilli, seeded and chopped
  8. 1 heaped tsp paprika
  9. 1 tbsp tomato puree
  10. Salt and freshly ground black pepper
  11. 1 tbsp freshly ripped coriander leaves
  12. extra Tabasco Red for serving
  1. Cut wing tips from wings and discard. Halve remainder at the joint to give two pieces per wing. Place in a bowl. Pour over white wine and Tabasco® Red Pepper Sauce and leave for 30 minutes.
  2. Transfer to a roasting dish with a slotted spoon. Add onion, garlic, sugar,
  3. chilli, and paprika and tomato puree to wine mix and stir. Season. Pour
  4. over wings. Bake in a pre-heated oven Gas 5 375F 190C for 30 minutes, covered with foil. Remove foil and continue cooking, turning wings over occasionally, until sauce is reduced to a sticky, aromatic coating. Scatter over coriander and serve sprinkled with extra Tabasco®.
