Mozzarella, Tomato and Basil Crostini – Gluten Free

Mozzarella, Tomato and Basil Crostini - Gluten Free
Whether you are planning an intimate meal for two, inviting family round, or in our case have to factor in the children, this is a great appetiser to suit all ages and quick to make should you have unexpected guests.

  1. 1 box Udi’s Plain Bagel Chips
  2. Olive oil
  3. Mozzarella cheese, tear into bite sized pieces
  4. 6-8 cherry vine tomatoes, sliced into rings
  5. 1 tablespoon extra virgin olive oil
  6. 1 tablespoon gluten-free balsamic vinegar
  7. Basil leaves, finely sliced
  8. Sea salt and black pepper, to season
  1. Preheat the oven to 180C / 350F / Gas 4
  2. Lay the bagel bites on a baking tray and sprinkle drops of the olive oil lightly over each bagel bite.
  3. Tear the mozzarella into small pieces and place on top of each bagel bite, then top with a slice of tomato. Season with sea salt and black pepper if desired and place in the oven for approximately 10 minutes or until the cheese starts to melt.
  4. Whilst they are toasting, place the gluten-free balsamic vinegar and olive oil in a small dish and stir until thoroughly combined. Add the finely sliced basil leaves and coat in the dressing, then using a teaspoon place a small amount on top of each crostini and serve immediately.
