As part of Coeliac Awareness Week we have a number of recipes this week, courtesy of UDI’s to share with you, so get your aprons on and your taste-buds ready for a flavour extravaganza!
- 1 cup of full fat natural or Greek yoghurt
- 4oz raspberries
- 4oz blueberries
- 1 ½ cups of Udi’s Gluten Free Cranberry and Walnut Granola
- 4 tablespoons of honey
- You will need four parfait or other tall glasses. Carefully spoon two tablespoons of yoghurt into the bottom of each glass and smooth the surface over. Sprinkle two tablespoons of Udi’s Gluten Free Cranberry and Walnut Granola overtop along and compress with the back of the spoon. Sprinkle several berries on top and press down gently. Repeat the process until you reach the top of the glass creating layers of yoghurt, fruit and granola. Finish the parfait with a last sprinkle of granola and berries. Drizzle some honey over the top for extra sweetness if desired.
