When people think of Mexican cuisine, chances are guacamole will be top of the list of what comes to mind. As you might expect with this type of dish, everyone has their own family recipe, but here’s a rough idea of the basics you need to prepare a dish suitable for those crunchy tortillas.
- 2 very ripe avocados, 2 crushed cloves garlic, 1 chopped tomato, 1 small finely chopped red onion, 1tbsp coriander, lime juice and salt to taste
Mash the avocado roughly and mix it with the crushed garlic, chopped tomato and chopped onion. Add finely chopped coriander, lime juice and salt to taste. You can also add finely chopped red chilli if you like some heat in your guacamole.
- 2 ripe and flavourful chopped tomatoes, 1 small finely chopped white onion, handful of chopped coriander, lime juice and salt to taste
Mix all of the ingredients together, adding lime juice and salt to taste
Don’t open a pack of Doritos, instead cut soft tortillas into triangles and brush both sides with oil. Bake in a hot oven for around 5-7 minutes until the tortillas are golden and crispy.
In Mexico the tortilla chips are served in a bowl with the dips separate so you can add as much guacamole and tomato salsa as you like. Perfect served with a cold beer and a wedge of lime.
